  2. Nothing wrong with it. It just seems like a hassle, especially in large volumes. Opening and closing the bags is difficult; You cannot easily add or take out ingredients. Bones tend to have sharp or pointy edges which could pierce the bags. I guess a benifit of vacuum sealing broths would be the closed environment which might help keeping flavour inside and oxygen out.

  3. Gotcha. All I do is add bones and water to a bag, and let the sous vide do the work.

  4. It sounds plausible that the lack of oxygen in the bags would result in a better tallow. Oxidisation of fat really adds a funk which is unpleasant.

  5. It’s the niboshi. People will usually tell you to remove the heads and guts but this is not necessary. Temperature control has a big impact on your final broth.

  7. For the best results, put niboshi in water and leave overnight. The next day, heat slowly over medium heat to 80°C. Then reduce heat to low and simmer between 60-75°C for 2 hours. Then the taste will change to sweetness as opposed to bitterness. You can combine this dashi with your main broth afterwards.

  10. You're not missing anything with regards to the TER; using those two funds at 88/12 results in a combined TER of 0.132% which is indeed lower than VWCE or IWDA. Just make sure the lower TER is not being negated by the potential higher costs to purchase these funds at your broker.

  14. Please don’t marinade your eggs for two weeks lol. That’s not safe. One and a half day is usually enough. You can go up to four days (but won’t notice a big difference). Any more than that will only result in a rancid egg.

  15. I cooked them first and then added them to the broth, they were handmade noodles so lots of flour probably still on them I’m guessing not sure!

  16. Are you dusting them with flour to prevent sticking? Try potato starch next time. Boil in a seperate pot of water and strain when done. Normally there’s no need to rinse unless it’s tsukemen noodles.

  25. It seems you are confusing dollar cost averageing with periodic investing. DCA is a methodology that tries to reduce the chances of buyin into the top of the market with your complete capital, and spread this over several time points. Periodic investing is investing a similar portion of your periodic income over time.

  26. Not sure why you're downvoted, since you're right.. DCA is often confused with periodic investing, since you both periodically invest a portion of money. DCA however is deliberately splitting up a lump-sum into smaller portions to spread out your investments over time, thus averaging the cost, whereas periodic investment is simply purchasing a portion of shares periodically whenever you have the funds available.

  29. Ya’ll need to understand that this egg is a different style than your typical soft-boiled ramen egg. Hard-boiled eggs in ramen are not uncommon in Japan. The owner of this restaurant probably thinks a hard-boiled egg pairs better with this style of ramen. I could see why.
