I’m not sure what’s happening exactly, but like you said he’s obviously terrified of you and your wife. So stop triggering him while you figure it out. Leave the food in another room if possible and only approach him if absolutely necessary.

Let him sniff. Maybe don't even try to pet. Use a long leash for the car. Arrive early so you can take a long time going slow helping him out the car. You have to go very slow because repeating highly stressful interactions may make things worse. I understand it's heartbreaking but perhaps it's good to give him the space he's asking for and take HIS time with him.
Yea we are definitely giving him the space he needs/wants as much as we can but with incontinence we are forced to change diaper occasionally which sucks because that’s probably the time we get the worst reaction.

No it doesn’t matter at all. I registered my first Corgi, didn’t register my 2nd (although I could have). Obviously if you were to be involved in breeding stuff then it matters, but since you are not it doesn’t matter in the slightest.
