1. Yes. This is how all pedals work in every single vehicle you'll come across (real life or sims). Or are we misunderstanding something?

  2. Wrong. Load cells are really only on the brake and are there so you can put measured load on the pedal instead of travel as an input, which, while somewhat closer to real life, is not at all the same as hydraulic brake actuation. For race cars, yes, pedals are hard as hell, but road cars and trucks are nice and soft and travelley... The G29 will feel great for OP - i think he doesn't understand that pedals have travel instead of being on/off switches.
