The Jewish Community Center in the Meyerland area. They have adult swim lessons, and an indoor pool so you can take lessons before summer. Not sure what their pricing is though.
I found a guy a few years ago on craigslist. I learned to swim as a kid but wanted to get back into it as an adult. The craigslist guy came to my apartment and we used the pool.

Shac (south Houston aquatic center) has a great program and very reasonably priced ($20 per lesson)

If the City of Houston opens pools this summer (they didn't last year), they offer free classes for all through their Swimwise program.

Houston Swim Club is the absolute best - in my opinion. They have locations in Sharpstown, Sugarland and Katy.
Start with floating.
Wait until April. You will be likely be able to practice in your front yard.
Just spend enough time living/eating here and let buoyancy do its thing
