Red meat I'd be ok with; most of the meat I eat anyway is chicken so it wouldn't make a significant change in my diet. Becoming allergic to dairy, specifically cheese (most other dairy replacements I forget don't really have or already replace) would be difficult.
That's about the growth I had 2 years ago when I was 21. I now have a full beard. I'd say shave and try again for 3-4 months growth in 1 year. If that is still patchy, shave and repeat in 6 months
It would be a gamble but I think I'd go for it. I would be able to live off the interest for the most part, maybe supplement my income with a part time job near by. not working 60 hours a week would be amazing.
I think you would need to have a part or full time job like you mentioned. Assuming 4.6% APY, which is what my savings account gives me, that's 34,500 per year. Not quite enough to live on. But, it is a nice little pay bump just from the interest alone
I seem to recall that 2.5 million is, for most people, the "F You" number where you can just live off interest for the rest of your life. Then you get to say "F You" to anything you don't want to deal with for the most part.

My mom has alphagal, she is allergic to all poultry now. For a time it was all poultry except turkey, but she is allergic to that too now
