There was a honey shop in Durango I used to go to as a kid and they had these in like 30 different flavors. Used to buy a ton of em and eat em all on the car ride. So good.
They're grades by the USDA (Department of Agriculture). It basically defines how good the marbling is. If we disregard Wagyu and such, then Prime is the best grade, Choice is a step down but still very good. Select is below Choice and would be the "standard" meat at a grocery store if it just says USDA inspected. There are grades below Select, but most grocery stores do not sell steaks of that level.
What becomes of the meat that’s graded lower than select? Ground beef?

I do not pat it dry and I always peek. Those are probably my problems.
Definitely do not put cuts in. What that’s doing is allowing all the moisture to seep out and continue wetting the pan, which is steaming the meat. So you end up with no sear, and very dry meat as well. That’s probably your biggest problem.

It sucks to think about now, for sure. At this time and for most of humanity before, the earth felt like a vast place of endless resource. Traveling pre-plane, pre-vehicle, pre-internet, took ages to cover distances that are short trips now. It wasn’t understood or thought about how precious and finite these resources are. Hopefully now that we’re aware, it isn’t too late. But it might be.

Newest sets (SWSH) are mostly $4-$5 retail. Some older sets in Sun and Moon/XY era sets are going for between $10-20. Go older than that, and the packs start going up in price.
