If you need to revoke titles and manage border I only do it if it's like 80+ chance to accept. Then wait a few years for Tyranny to go down for the next title.

When you found a holy order, it will be only for that current religion. If you switch religions it will not cone with you. Convert first, then form order of the nine
In the leftmost diplomacy tree: take the "Forced vassalage" perk. It scales with certain innovations so late game you should be able to force small kingdoms into your realm.
Disinherit/murder all your kids. Or crown authority 4 and declare a house member heir. Alternatively if your culture allows for Elective succession, add an elective law to your titles.
Honestly Iberia has so many great Capitols! Barcelona can build a University if you do wish to stay there. Otherwise Santiago is Catholic Holy site with 3 other special buildings near by. But Cordoba, Madrid and Saragoza are all great!
The aggro is totally normal. They hate your culture (aylied were slavers and tyrants) and your faith (you worship daedra) Last time I tried that area I almost lost everything until I inherited the Kingdom of Silvenar (the Duke is 4th in line at start date)
